SWEET KISS – IRREISTIBLE CHEESCAKE FOR LOVERS

Do I love sweets? Hell yeah! Those who follow my blog know that there are often sweet temptations at home. BUT healthy ones. A healthy lifestyle (in all its manifestations) matters lots to me as I consider it one of the most important gifts I can grant my family and myself. Hence, treats at home are always raw and comprising of healthy ingredients. By “healthy” I do not necessarily mean “bio” or “organic”. I consider “healthy” the products that do not overload our bodies, fill us with valuable nutrients (which enhance our health) and have not undergone thermal or other processing. In other words, I am refering to alternative, raw ingredients as close to nature as possible.

The food that I prepare must not only be healthy but also beautifully presented. Because the delight of the senses also comes from the eyes. Honestly, it loads me with energy and happiness a big time. Sometimes I spend hours in the kitchen just to have the rice served in the shape of a heart with perfect splashes of soya sause round the plate. Or…when I prepare cheesecake with a big, red, juicy, sweet kiss right in the mid of it!

The last dessert that I prepared, as a surprise for my husband, was exactly this kind of a cheesecake. The recipe is absolutely simple, and the preparation does not take far too long. I personally always cook with a glass of white wine in my hand, hence measuring time in terms of glasses of wine I prepared the dessert in 2 glasses time. Below I share how exactly 😉

CHEESECAKE RECIPE

PRODUCTS

For the kiss:

  • 1/2 cup of almond flour
  • 1/2 cup of coconut flour
  • 1/2 cup of yogurt
  • a pinch of baking powder
  • 2 eggs
  • 150 grams of melted butter
  • 2 tablespoons of honey
  • red food coloring
  • grated orange peel

Cheesecake base:

  • 250 grams of coconut flakes
  • 10 grape grains
  • 1 tablespoon of hazelnut tahan
  • 1 tablespoon of honey

Pink creme

  • 360 grams of Philadelphia
  • 2 tablespoons of honey
  • pink food coloring
  • agar-agar

White creme

  • 360 grams of Philadelphia
  • 2 tablespoons of honey
  • agar-agar

Decoration

  • 250 grams of fresh strawberries
  • 100 grams of blueberries
  • 100 grams of organic chocolate
  • 1 tablespoon of coconut oil
  • 50 grams of grated almond


PREPARATION

The kiss 

Mix well the eggs and then slowly add the flour, butter, yoghurt with the baking powder, honey, red food coloring and finally the grated orange peel. Then spread the mixture over a baking paper in a large pan. Preheate the oven and bake for about 15 minutes at 180°C. Allow to cool, and then using a cookie kisse shape form your cheesecake kisses.

Cheesecake base

Blend all products. Spread the mixture over the cheesecake base. Leave it in the freezer while preparing the first creme.

Pink creme

Blend all the ingredients and pour the resulting mixture over the base and leave for another 15 minutes in the freezer. 

The kisses

Meanwhile, arrange the kisses one on top of each other for the lenght of the cake pan. Once the first cream tightens, gently arrange the kisses in line.

White creme

Blend the ingredients and gently pour the resulting mixture over the first cream and kiss line.

Decoration

Melt the chocolate and the coconut oil in a water bath. Cut the strawberries in two and dip in the melted chocolate. Arrange carefully on the top of the cheesecake. Add the blueberries and sprinkle with the grated almond.

Consume with love. The delight is guaranteed.
